I'm doing a report for my high school spanish class. I also have to do a presentation and I would like to bring in some food. If someone could give me recipes - especially for llapingachos - it would be great. The more the better! Thanks a lot. go_blue1997@yahoo.com

Llapingachos, a predominantly highland food, is now a national one. It consists of potato patties mixed with cheese, then fried, in which you pour over a sauce made out of ground peanuts (preferably not peanut butter, although you could use a natural peanut butter--check your local health food store), garlic, chopped green onions. As a "side dish" you add rice with a fried egg over it. Some people also like to have some form of sausage (I like to use spanish Chorizo)along with the dish. Bon apetit!

llapingachos
My mother used to make the potato patties out of mashed potatoes with cheeze bits inside, that she'd bake in the oven till they browned (and melted the cheeze inside). Then she'd put these on a bed of lettuce, put a fried egg on top, and then pour the peanut sauce over it all. We loved it!

To Lilu re: Seco de Chivo Recipe
Chivo aka goat meat is a little difficult to find in the U.S. & a little on the tough side thus I recommend you try to find someone w/ a pressure cooker that you can borrow assuming you don't already own 1.
First cut up the chivo (you can use all pieces of meat w/ bone or all boneless. I recommend a combination of both). Put it in the pressure cooker w/ water. Cook 20-30 mins. (after in whistles). Release the steam & drain all the water off. (Chivo also has a kind of strong flavor so each time you throw off the old cooking water you're getting rid of any grease plus the strong flavor & the longer you cook it the more tender it gets). I would suggest repeating this twice (cooking 20-30 mins. & discarding the water). Now you're ready to go. Add chopped onions, peppers & garlic. No specific amount but A LOT, add salt, pepper, comino, Sazon (a Latino seasoning you will find in the Spanish section of your supermarket) & some chopped tomatoes. Cooked covered over medium low heat until everything that you've added is well cooked. Now remove the cover & continue cooking over low heat until it thickens. Now taste the liquid and if it doesn't have quite enough flavor then add more seasoning. Cook a little longer & serve w/ white rice. |
