Very simple recipe, please??

Hello:
My daughter needs to bring 500 samples to school from something eaten in Ecuador. I'm hoping to find a recipe for something very simple like a cookie or something that doesn't need refridgeration and is not that expensive to make 500 of. Can anyone help me, please???
