Good Ecuadorian recipes

My boyfriend is from Quito, Ecuador. He cooked delicious ceviche and llapingachos last time. I need good Ecuadorian recipes especially for someone from Quito so I can cook for my boyfriend this time. Please HELP!

hey, my mother's ecuadorian and all she knows how to cook is ceviche and llapingachos! I think everything else is basically european that they eat, from what she tells me! if you find any other recipes, please post them!
