Cheese Empanadas, Baños de Agua Santa, Ecuador [01:10]
Making empanadas with cheese in the market of Baños de Agua Santa, Ecuador. Ecuadorian Cheese Empanadas Empanadas are normally small cheese or meat pies, but also may be filled with fruit. They can be made with different kinds of flour; fried or cooked in the oven. Ingredients Dough: 1 pound (500g.) wheat self-rising flour, sifted 1 egg + 1 additional yolk 3 Tbsp. margarine 1 Tbsp. vegetable oil ½ - ¾ teaspoon salt ¼ -1/3 cup of water, room temperature Filling: 3 white onions (spring onions) chopped 1 ½ Tbsp. margarine pinch of pepper ¼ pound (125 g.) white semi-soft cheese (queso fresco)* * Queso fresco is a white cheese of medium/soft consistency that melts when it is hot; it is similar to mozzarela cheese, but a little harder and may have more salt. Preparation Melt butter and oil in small pan (or microwave). Place the sifted flour in a bowl, make a hole in the middle and add egg and extra yolk. Start mixing with a spoon. Add salt and melted butter while mixing with spoon, incorporating the flour. Add water, LITTLE BY LITTLE, depending on how the dough looks. At this point it will be sticky. Sprinkle with flour on top and start kneading with fingers for a while until dough is no longer sticky. It will be ready when dough separates from the bowl. Let it rest inside the bowl for 15 to 20 minutes. Meanwhile, in a small frying pan, fry the white onions in the rest of the margarine until transparent, without browning. Video #16 - Ecuador - Grocery Store in Small Town Ecuador [01:24]
This is the most well stocked grocery store I found in a small town in Ecuador in my 3 weeks there. There was no name on the front of the store but it is in the middle of San Jose de Chamanga, Ecuador. The man who runs it obviously takes pride in what he does. At the end of the video there are eggs and bulk cheese (covered up in the bowl) on the counter. He did not have meat to sell, that was in the "open air" market shown in Video #1.

Improving Livelihoods by Conserving Mangroves [06:29]
More than 900 families in Ecuador depend on crabbing in the mangroves of the Gulf of Guayaquil. These same mangroves mitigate global warming and contribute to global carbon sequestration efforts. The Gulf is one of six sites where the USAID Sustainable Forests and Coasts project is conserving biodiversity and protecting natural resources from depletion. In this case, the project works with the Ministry of the Environment and crabbing communities to protect the $60 million in crabbing related activities while preventing mangrove deforestation. See how over 60000 hectares are being protected as well as how the project is helping communities receive a higher price for their crab meat sales.

The governement and the Red Cross were quick to respond. However, so far, food supplies provided by the authorities have lasted only two days. With support from home and afar, the Ali Shungu foundation is delivering food to two communities. It costs about $.75 per person each day to provide a simple, nutricious meal of meat, potatoes and vegetables.
