Making empanadas with cheese in the market of Baños de Agua Santa, Ecuador. Ecuadorian Cheese Empanadas Empanadas are normally small cheese or meat pies, but also may be filled with fruit. They can be made with different kinds of flour; fried or cooked in the oven. Ingredients Dough: 1 pound (500g.) wheat self-rising flour, sifted 1 egg + 1 additional yolk 3 Tbsp. margarine 1 Tbsp. vegetable oil ½ - ¾ teaspoon salt ¼ -1/3 cup of water, room temperature Filling: 3 white onions (spring onions) chopped 1 ½ Tbsp. margarine pinch of pepper ¼ pound (125 g.) white semi-soft cheese (queso fresco)* * Queso fresco is a white cheese of medium/soft consistency that melts when it is hot; it is similar to mozzarela cheese, but a little harder and may have more salt. Preparation Melt butter and oil in small pan (or microwave). Place the sifted flour in a bowl, make a hole in the middle and add egg and extra yolk. Start mixing with a spoon. Add salt and melted butter while mixing with spoon, incorporating the flour. Add water, LITTLE BY LITTLE, depending on how the dough looks. At this point it will be sticky. Sprinkle with flour on top and start kneading with fingers for a while until dough is no longer sticky. It will be ready when dough separates from the bowl. Let it rest inside the bowl for 15 to 20 minutes. Meanwhile, in a small frying pan, fry the white onions in the rest of the margarine until transparent, without browning. Isla Salango and Isla de la Plata, Ecuador [04:28]
Check the previous video for the dolphins. Here's a look at some of the non-dolphin animals off the coast of Ecuador including whales, frigates, and, of course, the famous blue-footed boobies. This includes the rest of the Isla De La Plata tour as well as some whale watching off the coast of Isla Salango. The whales were pretty elusive. They would come up about every 10 minutes real quickly to grab a breath of air and it was hard to predict where they would be to get a close-up. And we couldn't get too close because they would have destroyed our little boat. But Isla Salango was worth it. We all sneaked onto the island illegally and had a nice, relaxing little beach party on the deserted island. I couldn't bring the camera for that though since we had to anchor the boat about a block off the shore and swim in. I thought I'd drown in the middle of the Pacific Ocean. Good times.
